Snowball Cookies

A classic no-bake cookie made with crushed vanilla wafers, powdered sugar, butter, and coated in sprinkles or coconut for a festive, melt-in-your-mouth treat.

  • 90 g crushed vanilla wafers
  • 60 g powdered sugar plus extra for rolling
  • 57 g unsalted butter melted and cooled slightly
  • 5 ml pure vanilla extract
  • 25 g sprinkles or shredded coconut for coating

Preparation Steps

  • Place the crushed vanilla wafers in a large mixing bowl.
  • Add the powdered sugar, melted butter, and vanilla extract to the bowl. Mix well until a crumbly dough forms.
  • Using your hands, gently knead the mixture until it comes together into a soft dough.
  • Roll the dough into small balls, about 1 inch in diameter, using about 1 tablespoon of dough per ball.
  • Place the sprinkles or shredded coconut on a plate. Roll each dough ball in the coating until fully covered.
  • Transfer the coated balls to a baking sheet lined with parchment paper. Repeat with remaining dough.
  • Refrigerate the cookies for at least 30 minutes before serving to allow them to firm up.

Notes

These cookies are best served chilled and make a delightful no-bake dessert for any occasion.
