Instructions
Preparation Steps
Place the crushed vanilla wafers in a large mixing bowl.
Add the powdered sugar, melted butter, and vanilla extract to the bowl. Mix well until a crumbly dough forms.
Using your hands, gently knead the mixture until it comes together into a soft dough.
Roll the dough into small balls, about 1 inch in diameter, using about 1 tablespoon of dough per ball.
Place the sprinkles or shredded coconut on a plate. Roll each dough ball in the coating until fully covered.
Transfer the coated balls to a baking sheet lined with parchment paper. Repeat with remaining dough.
Refrigerate the cookies for at least 30 minutes before serving to allow them to firm up.
Notes
These cookies are best served chilled and make a delightful no-bake dessert for any occasion.
