Preheat oven to 375°F (190°C). Season pork chops with salt and pepper.
Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear pork chops on both sides until browned, about 2-3 minutes per side. Remove from skillet and set aside.
Add onion and mushrooms to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Stir in flour and cook for 1 minute. Gradually whisk in chicken broth and heavy cream. Bring to a simmer and cook until sauce has thickened, about 3-5 minutes. Stir in thyme, salt, and pepper.
Place pork chops back into the skillet with the sauce. Cover and bake in the preheated oven for 30-35 minutes, or until pork chops are cooked through.
Serve hot over mashed potatoes, rice, or noodles.
Notes
For a richer flavor, use bone-in pork chops. You can also add a splash of Worcestershire sauce to the sauce for extra depth.
