Ingredients
- 1 medium onion, thinly sliced
- 2 pork tenderloins, about 1 pound each patted dry
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup low-sodium beef broth
- 1 packet pork gravy mix
- 4 tablespoons salted butter thinly sliced
- as needed cooking spray
- as desired fresh parsley chopped, optional garnish
Instructions
Coat a 6- or 8-quart slow cooker with cooking spray. Add the sliced onion to the bottom.
Pat the pork tenderloins dry and season all over with the salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat. Sear each tenderloin on all sides until browned, working one at a time.
Set the seared tenderloins over the onions in the slow cooker and pour the beef broth around them.
Sprinkle the pork gravy mix evenly over the meat and place the butter slices on top.
Cover and cook on low for 2 to 2 1/2 hours, until the pork reaches at least 145°F and the onions are tender.
Slice the pork and serve it with the onion juices as gravy. Finish with parsley if desired.
Use an instant-read thermometer rather than color alone to judge doneness.
For thicker gravy, whisk a slurry of 2 tablespoons cornstarch and 2 tablespoons water into the cooking liquid and heat until thickened.
