Slow Cooker Mississippi Pot Roast Sandwiches

Tender Mississippi pot roast sandwiches combine slow-cooked beef, pepperoncini, buttery gravy, and toasted rolls for an easy family dinner.

  • 1 ripe banana peeled and cut into soft bite-size pieces
  • 1 ripe avocado peeled and cut into thick wedges
  • 1 medium sweet potato peeled and cut into thick sticks
  • 1/2 cup rolled oats ground into a coarse flour
  • 1/2 cup plain whole-milk yogurt unsweetened
  • 1/2 cup water for cooking the oats
  • 1/4 teaspoon ground cinnamon for the oat fingers
  • 1/2 cup soft cooked vegetables such as carrots or broccoli, cooled and cut into small pieces

  • Steam the sweet potato sticks and soft cooked vegetables until a fork slides through easily, about 10 to 12 minutes; cool until comfortably warm.
  • Cook the rolled oats with the water and cinnamon in a small saucepan over medium-low heat until very thick, about 4 minutes.
  • Spread the thick oats in a thin layer on a lined plate, cool until firm, and cut into graspable fingers.
  • Arrange the banana, avocado, sweet potato, oat fingers, and soft cooked vegetables on a plate, then serve the yogurt on the side.
