Ingredients
- 2 pounds boneless, skinless chicken thighs trimmed
- 1 pound baby potatoes halved
- 3 cups carrots cut into thick pieces
- 1 yellow onion sliced
- 5 cloves garlic minced
- 1/3 cup honey
- 1/3 cup low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 2 tablespoons cornstarch whisked with 3 tablespoons cold water
- 2 tablespoons chopped green onions for serving
Instructions
Arrange potatoes, carrots, and onion in the slow cooker and place chicken on top.
Whisk honey, soy sauce, vinegar, garlic, paprika, and pepper together; pour over the chicken and vegetables.
Cover and cook on LOW for 4 to 5 hours, until chicken reaches 165°F and potatoes are fork-tender.
Transfer chicken and vegetables out. Stir cornstarch slurry into hot liquid, cover, and cook on HIGH 10 to 15 minutes until glossy and thickened.
Spoon sauce over the chicken and vegetables, garnish with green onions if using, and serve warm.
