Slow Cooker Creamy Potato Bacon Soup

This creamy potato bacon soup is the ultimate comfort food, rich and full of flavor, easily made in a slow cooker.

  • 6 cups potatoes peeled and diced
  • 1.5 cups chicken broth
  • 1 cup heavy cream
  • 8 slices bacon cooked and crumbled
  • 1 cup shredded cheese cheddar preferred
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
  • 0.25 cup green onion chopped, for garnish

Preparation Steps

  • In a slow cooker, combine potatoes, chicken broth, salt, and pepper.
  • Cook on low for 5-6 hours or until potatoes are tender.
  • Stir in heavy cream and shredded cheese, cook for another 30 minutes.
  • Serve hot, garnished with bacon and green onion.

Feel free to add more cheese if desired for extra creaminess.
