Slow Cooker Chicken and Broccoli Casserole: A Family Favorite

This slow cooker chicken and broccoli casserole is a delightful and easy meal, perfect for busy weeknights. Packed with tender chicken, fresh broccoli, and a creamy cheese sauce, the whole family will love it!

  • 3 cups diced cooked chicken breast approximately 1 pound
  • 4 cups broccoli florets fresh or frozen
  • 1 large yellow onion finely diced
  • 2 cups shredded cheddar cheese divided
  • 1 cup heavy cream
  • 1 can cream of chicken soup 10.5 oz
  • 1 teaspoon garlic powder
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 teaspoon onion powder
  • 2 tablespoons fresh parsley chopped, for garnish

Preparation Steps

  • In a large mixing bowl, combine diced chicken, broccoli florets, and diced onion, tossing to mix well.
  • In another bowl, whisk together 1 1/2 cups of cheddar cheese, heavy cream, cream of chicken soup, garlic powder, salt, pepper, and onion powder until smooth and thoroughly combined.
  • Spray the inside of a slow cooker with non-stick cooking spray. Layer half of the chicken and broccoli mixture at the bottom of the slow cooker. Pour half of the cheese sauce over the chicken and broccoli. Repeat layers with the remaining mixture and sauce.
  • Cover and cook on low for 4-5 hours, or until the broccoli is tender and the casserole is bubbling.
  • During the last 30 minutes of cooking, sprinkle the remaining 1/2 cup of cheddar cheese over the top, allowing it to melt.
  • Serve hot, garnished with fresh parsley. Enjoy as a hearty main dish.

Notes

This casserole keeps well in the refrigerator for up to 3 days and can be reheated in the microwave or oven. Add some cooked rice or pasta for an even more filling meal.
