Slow Cooker Chicken

A delicious and easy slow cooker chicken recipe with flavorful herbs and vegetables.

  • 8 pieces chicken thighs (bone-in, skinless)
  • 28 oz crushed tomatoes
  • 0.5 cup sliced red bell pepper
  • 0.5 cup sliced green bell pepper
  • 0.5 large onion, sliced
  • 1 tsp dried oregano
  • 1 bay leaf bay leaf
  • salt and black pepper to taste
  • 0.25 cup chopped fresh basil or parsley

Instructions
 

Preparation Steps

  • Season chicken thighs with salt and black pepper. Place in the slow cooker.
  • Pour crushed tomatoes over the chicken, then top with sliced onions and peppers. Add oregano and bay leaf, then give a quick stir.
  • Cover and set the slow cooker to LOW for 8 hours or HIGH for 4 hours.
  • When cooking completes, remove bay leaf, garnish with fresh herbs, and serve hot.

Notes

This recipe is perfect served with rice or crusty bread.
