Instructions
Preparation Steps
Season chicken thighs with salt and black pepper. Place in the slow cooker.
Pour crushed tomatoes over the chicken, then top with sliced onions and peppers. Add oregano and bay leaf, then give a quick stir.
Cover and set the slow cooker to LOW for 8 hours or HIGH for 4 hours.
When cooking completes, remove bay leaf, garnish with fresh herbs, and serve hot.
Notes
This recipe is perfect served with rice or crusty bread.
