Slow Cooker Beef and Broccoli

Ingredients
- 1 1/2 lb beef chuck thinly sliced
- 1/2 cup low-sodium soy sauce
- 1/3 cup beef broth
- 1/4 cup brown sugar packed
- 3 cloves garlic minced
- 1 tbsp fresh ginger grated
- 1 lb broccoli florets
- 1 tbsp cornstarch mixed with 2 tablespoons water
- 2 tbsp sesame seeds
- 2 scallions sliced
Instructions
Whisk soy sauce, broth, brown sugar, garlic, and ginger in the slow cooker.
Add sliced beef and turn to coat it in the sauce.
Cover and cook on low for 4 to 5 hours, until tender.
Stir in the cornstarch slurry, add broccoli, cover, and cook on high for 20 to 30 minutes until the broccoli is bright green and crisp-tender.
Serve over rice and finish with sesame seeds and scallions.
