Sloppy Joe Cornbread

A delicious and easy weeknight meal combining savory Sloppy Joe filling with a sweet and fluffy cornbread topping.

Ingredients
  

Sloppy Joe Filling

  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup ketchup
  • 2 tablespoon brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon chili powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Cornbread Topping

  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 0.333 cup granulated sugar
  • 2 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 large egg
  • 0.5 cup milk
  • 0.25 cup vegetable oil

Preparation Steps

  • Preheat oven to 375°F (190°C). Grease and flour a 9x13 inch baking dish.
  • In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.

  • Add the chopped onion and green bell pepper to the skillet. Cook until softened, about 5 minutes.

  • Stir in the ketchup, brown sugar, Worcestershire sauce, chili powder, garlic powder, salt, and pepper. Simmer for 5-10 minutes, or until the sauce has thickened.

  • Pour the Sloppy Joe mixture into the prepared baking dish.
  • In a medium bowl, whisk together the flour, cornmeal, sugar, baking powder, and salt.

  • In a separate small bowl, whisk together the egg, milk, and vegetable oil.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  • Spread the cornbread batter evenly over the Sloppy Joe mixture.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center of the cornbread comes out clean.
  • Let cool for a few minutes before serving.

Notes

Serve hot. Optional toppings include shredded cheese, sour cream, or a drizzle of hot sauce.
