  • 1.5 pounds shrimp peeled and deveined
  • 1 cup chopped onions
  • 1 cup chopped green bell pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14-ounce can
  • 1 teaspoon creole seasoning
  • 1 cup chicken broth

Preparation Steps

  • Heat the olive oil in a large skillet over medium heat.
  • Add onions and green bell pepper, sauté until softened.
  • Stir in garlic and cook for another minute.
  • Add the diced tomatoes, chicken broth, and creole seasoning. Let simmer for 25 minutes.
  • Add shrimp to the skillet and cook until pink and cooked through, about 5 minutes.

Notes

Garnish with chopped parsley if desired. Serve over rice.
