Instructions
Preparation Steps
In a small bowl, combine cinnamon, rosemary, salt, and pepper.
Rub the spice mixture over the pork tenderloin to coat well.
Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned, about 4 minutes per side.
Place the pork tenderloin into a 6-quart slow cooker.
Add sliced apples and pour apple cider and chicken broth over the pork.
Cover and cook on LOW for 5 hours, or until pork is tender and easily shreds with a fork.
Remove the pork from the slow cooker and let it rest for 10 minutes before slicing.
Notes
For a deeper flavor, marinate the pork in the spice mixture overnight. Leftovers can be refrigerated for up to 3 days.
