  • 2 tbsp olive oil for searing
  • 4 lb pork tenderloin preferably boneless
  • 3 medium apples cored and sliced
  • 1.5 cup apple cider unsweetened
  • 1 tsp ground cinnamon
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 1 cup chicken broth optional for extra juiciness

  • In a small bowl, combine cinnamon, rosemary, salt, and pepper.
  • Rub the spice mixture over the pork tenderloin to coat well.
  • Heat olive oil in a skillet over medium-high heat. Sear the pork on all sides until browned, about 4 minutes per side.
  • Place the pork tenderloin into a 6-quart slow cooker.
  • Add sliced apples and pour apple cider and chicken broth over the pork.
  • Cover and cook on LOW for 5 hours, or until pork is tender and easily shreds with a fork.
  • Remove the pork from the slow cooker and let it rest for 10 minutes before slicing.

Notes

For a deeper flavor, marinate the pork in the spice mixture overnight. Leftovers can be refrigerated for up to 3 days.
