  • 2 lbs chicken thighs bone-in, skin-on
  • 3 tbsp olive oil
  • 2 tbsp dried Italian herbs
  • 1 tsp black pepper freshly ground
  • 1 tsp salt to taste
  • 2 cups wild rice blend uncooked
  • 5 cups chicken broth low sodium
  • 1 cup cherry tomatoes halved
  • 1 cup shredded Parmesan cheese for garnish

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large oven-proof skillet, heat olive oil over medium heat. Sear the chicken thighs, skin-side down, until the skin is golden brown, about 5 minutes. Turn the thighs and cook for another 3 minutes. Remove the chicken and set aside.
  • Add wild rice blend to the skillet and toast for 2 minutes. Stir in chicken broth and bring to a simmer. Return chicken thighs to the skillet, skin-side up, nestled among the rice.
  • Scatter halved cherry tomatoes over the top. Transfer the skillet to the preheated oven and roast for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
  • Remove from oven, sprinkle with shredded Parmesan cheese, and serve immediately.

Notes

For extra flavor, add a splash of lemon juice before serving. This dish pairs well with a light green salad for a complete meal.
