Savory Herb Grilled Chicken with Garlic Smashed Potatoes
An easy-to-make dinner featuring juicy grilled chicken in a savory herb marinade, paired with creamy garlic smashed potatoes. Perfect for family gatherings or a casual dinner night.
Combine olive oil, lemon juice, Italian herbs, garlic, salt, and pepper in a bowl. Coat the chicken with the mixture and let it marinate for at least 15 minutes.
Preheat the grill to medium-high heat and grill the chicken for 6-7 minutes on each side or until cooked through.
Place the peeled potatoes in a large pot, cover with cold water, and add a pinch of salt. Bring to a boil, then reduce to a simmer and cook until potatoes are tender.
Drain the potatoes and return them to the pot. Add butter and cream, then mash until smooth. Stir in the Parmesan cheese and adjust seasoning with salt and pepper.
