Savory Herb Chicken with Dumplings

Main Ingredients

  • 8 cups vegetable broth low sodium, if possible
  • 1.5 lbs chicken thighs boneless, skinless
  • 3 large carrots peeled and sliced
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper freshly ground
  • 1 tablespoon olive oil

For the Dumplings

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup buttermilk

For Garnish

  • fresh parsley chopped

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and garlic, and sauté until the onion is translucent.
  • Pour in the vegetable broth and add chicken thighs, thyme, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Remove chicken thighs from the pot, let cool, and shred using two forks. Return shredded chicken to the pot.
  • In a bowl, mix flour, baking powder, and salt. Stir in buttermilk until the dough is just combined.
  • Drop spoonfuls of dough into the simmering broth. Cover and let simmer for another 15 minutes, or until dumplings are cooked through.
  • Serve the soup in bowls, garnishing with fresh parsley.

Notes

Adjust seasoning to taste. Feel free to add more vegetables for extra flavor.
