For the Dumplings

Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add onion, carrots, and garlic, and sauté until the onion is translucent.
Pour in the vegetable broth and add chicken thighs, thyme, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
Remove chicken thighs from the pot, let cool, and shred using two forks. Return shredded chicken to the pot.
In a bowl, mix flour, baking powder, and salt. Stir in buttermilk until the dough is just combined.
Drop spoonfuls of dough into the simmering broth. Cover and let simmer for another 15 minutes, or until dumplings are cooked through.
Serve the soup in bowls, garnishing with fresh parsley.
Notes
Adjust seasoning to taste. Feel free to add more vegetables for extra flavor.
