  • 2 lbs boneless, skinless chicken breasts cut into 2-inch pieces
  • 3 tablespoons olive oil divided
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup honey mustard sauce
  • 1 package King's Hawaiian rolls
  • 1 cup fried onions
  • 0.5 cup mixed greens such as arugula and spinach

Preparation Steps

  • In a large bowl, mix the chicken pieces with 2 tablespoons olive oil, Italian seasoning, garlic powder, salt, and pepper. Ensure the chicken is well-coated.
  • Heat remaining tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken pieces and cook until brown and cooked through, about 5-7 minutes on each side.
  • Brush cooked chicken with honey mustard sauce, turning to coat evenly. Cook for an additional 1-2 minutes or until the glaze caramelizes slightly.
  • Preheat the broiler and lightly toast the sliced Hawaiian rolls under the broiler for about 1-2 minutes, until golden.
  • Assemble the sliders by placing a portion of glazed chicken on each bottom bun. Top with fresh greens, fried onions, and cover with the top bun. Serve immediately.

Notes

For an extra kick, serve with a side of spicy mustard or sriracha sauce.
