  • 2 cups long grain rice uncooked
  • 4.5 cups chicken stock low sodium preferred
  • 1.5 cups heavy cream
  • 3 cups cooked chicken diced or shredded
  • 4 cloves garlic minced
  • 1.5 cups cheddar cheese shredded
  • 2 cups broccoli florets chopped
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • 2 tablespoons olive oil
  • 1 teaspoon salt or more to taste
  • 1 teaspoon black pepper freshly cracked

Preparation Steps

  • Preheat your oven to 375°F (190°C). Lightly grease a large baking dish with olive oil.
  • In a large bowl, combine the rice, chicken stock, heavy cream, cooked chicken, and minced garlic.
  • Add the thyme, rosemary, salt, and pepper. Mix well to combine all ingredients thoroughly.
  • Fold in the chopped broccoli florets, ensuring an even distribution of vegetables.
  • Pour the mixture into the prepared baking dish and spread evenly.
  • Sprinkle half of the shredded cheddar cheese over the top of the rice mixture.
  • Bake for 40 minutes or until the rice is tender and most of the liquid is absorbed.
  • Remove from the oven and top with the remaining cheddar cheese. Return to bake for an additional 10 minutes until the cheese is melted and bubbly.
  • Allow the dish to rest for 10 minutes before serving to let the flavors meld together. Enjoy your meal!
