Instructions
Preparation Steps
Place chicken breasts between two sheets of plastic wrap. Pound to even thickness.
Season both sides of chicken with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on both sides.
Remove chicken from skillet and set aside.
In the same skillet, add garlic and cook until fragrant. Stir in chicken broth and scrape up browned bits from the pan.
Add butter and heavy cream, and bring to a simmer. Cook until sauce is slightly thickened.
Return chicken to skillet and spoon sauce over the top. Simmer until chicken is cooked through.
Serve chicken with sauce over a bed of mashed potatoes or rice.
Notes
For a richer sauce, substitute half of the chicken broth with white wine. Ensure internal temperature of chicken reaches 165°F (74°C).
