  • 4 pieces chicken breasts boneless, skinless
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon Italian seasoning
  • 4 cloves garlic minced
  • 1 cup chicken broth
  • 0.5 cup heavy cream
  • 2 tablespoons butter

Preparation Steps

  • Place chicken breasts between two sheets of plastic wrap. Pound to even thickness.
  • Season both sides of chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown on both sides.
  • Remove chicken from skillet and set aside.
  • In the same skillet, add garlic and cook until fragrant. Stir in chicken broth and scrape up browned bits from the pan.
  • Add butter and heavy cream, and bring to a simmer. Cook until sauce is slightly thickened.
  • Return chicken to skillet and spoon sauce over the top. Simmer until chicken is cooked through.
  • Serve chicken with sauce over a bed of mashed potatoes or rice.

Notes

For a richer sauce, substitute half of the chicken broth with white wine. Ensure internal temperature of chicken reaches 165°F (74°C).
