  • 1 pound penne pasta
  • 0.5 cup unsalted butter divided
  • 3 cups cooked chicken shredded
  • 1.5 cups cremini mushrooms sliced
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese divided
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Preparation Steps

  • Preheat the oven to 375°F (190°C). Grease a large casserole dish with butter.
  • Cook the penne pasta according to the package instructions for al dente. Drain well and set aside.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Add the mushrooms and sauté until golden and tender.
  • In the same skillet, pour in the heavy cream and bring to a gentle simmer. Stir in half of the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until the sauce thickens slightly.
  • Combine the cooked pasta, cooked chicken, sautéed mushrooms, and cream sauce in a large bowl. Toss until well combined.
  • Transfer the mixture into the prepared casserole dish. Sprinkle the remaining Parmesan cheese over the top.
  • Bake in the preheated oven for 30-40 minutes or until the top is bubbly and golden brown.

Notes

For an extra burst of flavor, consider adding sautéed onions or bell peppers to the dish.
