Savory Cheesy Herb Chicken with Roasted Vegetables

  • 2 lbs boneless chicken breasts
  • 1 large red bell pepper thinly sliced
  • 1 large yellow bell pepper thinly sliced
  • 1 large green bell pepper thinly sliced
  • 3 cloves garlic minced
  • 2 tsp dried thyme
  • 1 tsp salt more to taste
  • 0.5 tsp ground black pepper more to taste
  • 3 tbsp olive oil
  • 1.5 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 0.25 cup fresh basil chopped, for garnish

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, mix chicken breasts with garlic, thyme, salt, pepper, and olive oil until well coated.
  • Add sliced peppers to the bowl and toss to combine, ensuring everything is coated.
  • Spread the chicken and peppers in a single layer on a 9x13-inch baking dish.
  • Top with mozzarella and Parmesan cheese evenly.
  • Bake for 35-40 minutes until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let it rest for 5 minutes. Garnish with fresh basil before serving.

Notes

For a twist, try adding crushed red pepper flakes for some heat or using smoked paprika for a deeper flavor. Serve with pasta or a fresh side salad.
