  • 1.5 pounds spicy Italian sausage cooked and crumbled
  • 4 cups all-purpose flour
  • 1.5 tablespoons baking powder
  • 0.5 teaspoons baking soda
  • 1.5 teaspoons salt
  • 0.75 cups cold unsalted butter cubed
  • 3 cups shredded mild cheddar cheese
  • 1.25 cups buttermilk
  • 3 tablespoons chives chopped, for garnish

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment.
  • In a skillet, cook the sausage over medium heat, breaking it apart as it cooks. Drain and set aside.
  • In a large bowl, mix together flour, baking powder, baking soda, and salt.
  • Add the cold butter to the flour mixture. Use your hands or a pastry cutter to blend until the mixture is coarse.
  • Mix in the cheese and cooked sausage until evenly distributed.
  • Pour in the buttermilk and gently combine, being careful not to overwork the dough.
  • Turn the dough out onto a floured surface. Pat it into a 1-inch thick rectangle and cut into biscuits.
  • Transfer to the prepared sheet and bake for 20-25 minutes, or until golden.
  • Garnish with chopped chives and serve warm.

Notes

For a milder flavor, use regular sausage and mild cheddar.
