Preparation Steps
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment.
In a skillet, cook the sausage over medium heat, breaking it apart as it cooks. Drain and set aside.
In a large bowl, mix together flour, baking powder, baking soda, and salt.
Add the cold butter to the flour mixture. Use your hands or a pastry cutter to blend until the mixture is coarse.
Mix in the cheese and cooked sausage until evenly distributed.
Pour in the buttermilk and gently combine, being careful not to overwork the dough.
Turn the dough out onto a floured surface. Pat it into a 1-inch thick rectangle and cut into biscuits.
Transfer to the prepared sheet and bake for 20-25 minutes, or until golden.
Garnish with chopped chives and serve warm.
Notes
For a milder flavor, use regular sausage and mild cheddar.
