This flavorful beef and barley stew is a delightful blend of tender beef simmered with wholesome barley and colorful vegetables in a rich, hearty broth.
Heat the olive oil in a large pot over medium-high heat. Sear the cubed beef in batches until browned on all sides. Remove and set aside.
In the same pot, add onions and garlic. Cook until onions are translucent, about 5 minutes.
Add carrots and celery to the pot. Stir and cook for another 5 minutes.
Return the beef to the pot and add broth, barley, thyme, rosemary, salt, and pepper. Bring to a boil.
Reduce heat to low and cover. Let the stew simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked through.
Notes
For an extra twist, add some diced tomatoes or a splash of red wine for an added depth of flavor. Don't forget to remove any herb stems before serving.
