Savory Beef and Barley Stew

This flavorful beef and barley stew is a delightful blend of tender beef simmered with wholesome barley and colorful vegetables in a rich, hearty broth.

  • 3 tablespoons olive oil
  • 2 pounds beef chuck roast cut into cubes
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups celery diced
  • 1 cup pearled barley rinsed
  • 8 cups beef broth
  • 1 teaspoon thyme dried
  • 1 teaspoon rosemary dried
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Heat the olive oil in a large pot over medium-high heat. Sear the cubed beef in batches until browned on all sides. Remove and set aside.
  • In the same pot, add onions and garlic. Cook until onions are translucent, about 5 minutes.
  • Add carrots and celery to the pot. Stir and cook for another 5 minutes.
  • Return the beef to the pot and add broth, barley, thyme, rosemary, salt, and pepper. Bring to a boil.
  • Reduce heat to low and cover. Let the stew simmer for about 1.5 to 2 hours, or until the beef is tender and the barley is cooked through.

Notes

For an extra twist, add some diced tomatoes or a splash of red wine for an added depth of flavor. Don't forget to remove any herb stems before serving.
