Sausage White Bean Soup

  • 1 lb Italian sausage
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 15 oz cannellini beans, rinsed and drained
  • 6 cups chicken broth
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Preparation Steps

  • Brown the sausage in a large pot over medium heat. Remove sausage and set aside.
  • Add onion and garlic to the pot and cook until softened.
  • Stir in the beans, broth, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Add the cooked sausage back to the pot and heat through.

Notes

Serve hot with crusty bread. You can add other vegetables like carrots or celery for extra flavor.
