Roasted Tomato Soup

A rich and flavorful roasted tomato soup, perfect for a comforting meal.

  • 2.5 pounds Tomatoes Ripe Roma or vine tomatoes, halved
  • 1 medium Onion Quartered
  • 4 cloves Garlic Peeled
  • 2 tablespoons Olive Oil
  • 4 cups Vegetable Broth
  • 0.5 teaspoon Salt To taste
  • 0.25 teaspoon Black Pepper To taste
  • 0.5 cup Heavy Cream Optional, for richness

Preparation Steps

  • Preheat oven to 400°F (200°C).
  • On a baking sheet, toss the halved tomatoes, onion quarters, and garlic cloves with olive oil, salt, and pepper.
  • Roast for 30-40 minutes, or until the tomatoes are softened and slightly caramelized.
  • Transfer the roasted vegetables to a blender or food processor. Add the vegetable broth.
  • Blend until smooth. If using cream, stir it in now.
  • Heat the soup gently on the stovetop over medium heat. Do not boil.
  • Season with additional salt and pepper to taste.
  • Serve hot, garnished with fresh basil or a swirl of cream if desired.

Notes

This soup is also delicious served chilled on a warm day.
