Roasted Jalapeno Popper Grilled Cheese

- 4 slices bread sourdough or your favorite sandwich bread
- 2 large jalapenos
- 4 tablespoons 0.25 lb cream cheese, softened
- 4 slices cheddar cheese or Monterey Jack for extra meltiness
- 4 slices cooked bacon optional for extra flavor
- 2 tablespoons 0.1 lb butter, softened
- ¼ teaspoon garlic powder optional, for extra flavor
Step 1: Roast the Jalapenos
- Preheat your oven’s broiler or heat a grill to medium-high. 
- Place the jalapenos on a baking sheet and roast under the broiler or on the grill for 5–7 minutes, turning occasionally, until the skin is charred and blistered. 
- Remove the jalapenos, place them in a bowl, and cover with plastic wrap for about 10 minutes to allow the skins to loosen. 
- Once cool, peel off the charred skin, remove the seeds, and slice the jalapenos into strips. 
Step 2: Assemble the Sandwiches
- Spread 2 tablespoons of cream cheese on one side of two slices of bread. 
- Layer the roasted jalapeno strips, cheddar cheese slices, and bacon (if using) on top of the cream cheese. 
- Top with the remaining bread slices. 
Step 3: Grill the Sandwiches
- Spread butter on the outside of each sandwich slice and sprinkle with a bit of garlic powder if desired. 
- Heat a skillet or griddle over medium heat. 
- Place the sandwiches in the skillet and cook for 3–4 minutes per side, or until the bread is golden and the cheese is melted. Press down gently with a spatula while cooking. 
Step 4: Serve and Enjoy
- Remove from the skillet, slice in half, and serve hot. Enjoy the spicy, creamy, cheesy goodness!
