  • 1 cup heavy cream can substitute with half-and-half
  • 0.5 cup unsalted butter softened
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons chives finely chopped, for garnish

Preparation Steps

  • Preheat your oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  • Place peeled and diced potatoes in a large pot. Cover with cold water and bring to a boil. Cook until tender, about 15 minutes.
  • Drain the potatoes and return them to the pot. Squeeze the roasted garlic into the pot with the potatoes.
  • Add butter, heavy cream, salt, and pepper to the potatoes. Mash until smooth and creamy.
  • Garnish with chopped chives before serving. Enjoy!
