Red Wine Braised Short Ribs

Tender and flavorful beef short ribs braised in red wine and aromatic vegetables.

  • 4 pounds beef short ribs bone-in
  • 2 tablespoons olive oil
  • 1 cup red wine dry
  • 2 cups beef broth low sodium
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Season the short ribs with salt and pepper.
  • In a large Dutch oven, heat olive oil over medium-high heat. Brown the ribs on all sides, about 8 minutes, then transfer to a plate.
  • Add onion and garlic to pot and cook until onion is softened. Stir in tomato paste and cook for 1 minute.
  • Pour in wine and bring to a simmer, scraping up any browned bits. Cook for 2 minutes.
  • Return ribs to pot and add beef broth. Bring to a simmer, cover, and transfer to oven. Cook until ribs are very tender, about 3 hours.

Notes

For best results, make sure to use a good quality red wine.
