Red Wine Braised Short Ribs

Instructions
Preparation Steps
Preheat oven to 350°F (175°C).
Season the short ribs with salt and pepper.
In a large Dutch oven, heat olive oil over medium-high heat. Brown the ribs on all sides, about 8 minutes, then transfer to a plate.
Add onion and garlic to pot and cook until onion is softened. Stir in tomato paste and cook for 1 minute.
Pour in wine and bring to a simmer, scraping up any browned bits. Cook for 2 minutes.
Return ribs to pot and add beef broth. Bring to a simmer, cover, and transfer to oven. Cook until ribs are very tender, about 3 hours.
Notes
For best results, make sure to use a good quality red wine.
