Red Velvet Pancake Bites with Cream Cheese Drizzle

Ingredients
  

Main Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons cocoa powder
  • 1.5 cups buttermilk alternatively use milk
  • 2 large eggs beaten
  • 2 tablespoons red food coloring liquid form

Cream Cheese Drizzle

  • 1 package cream cheese softened, 8 ounces
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract pure

Preparation Steps

  • In a large bowl, whisk together flour, cocoa powder, and salt. In another bowl, mix buttermilk, eggs, and red food coloring.
  • Combine the wet and dry ingredients and stir until just combined. Do not overmix.
  • Heat a non-stick pan over medium heat. Pour small rounds of batter onto the pan. Cook until bubbles form on the surface, then flip and cook for an additional minute.
  • For the cream cheese drizzle, beat softened cream cheese until smooth. Gradually add powdered sugar and vanilla until creamy.

Notes

Ensure to not overmix the batter to keep the bites fluffy. Serve immediately for the best texture.
