A hearty and nutritious red lentil soup made with simple ingredients, perfect for warming up on cold days.

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 medium carrots diced
  • 2 cloves garlic finely chopped
  • 16 ounces red lentils
  • 8 cups vegetable broth
  • 1 teaspoon turmeric
  • 1.5 teaspoons ground cumin
  • 0.25 cup fresh parsley chopped
  • 2 cups baby spinach about 2 oz
  • 0.5 lemon lemon juiced

Preparation Steps

  • Heat the olive oil in a large pot over medium heat. Add diced onions and carrots; cook until soft, about 5-6 minutes.
  • Add chopped garlic, turmeric, and cumin; cook for another 2-3 minutes.
  • Stir in lentils and broth, bring to a boil. Reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
  • Add chopped parsley, spinach, and lemon juice. Stir to combine and cook for another 2 minutes. Serve hot.

Notes

This soup is versatile; you can add chopped celery or substitute spinach with kale for variation.
