Raspberry Swirl Cheesecake Delight

This delicious Raspberry Swirl Cheesecake is a perfect blend of creamy cheesecake and tangy raspberry swirls, all atop a buttery graham cracker crust. Ideal for special occasions or an indulgent treat!

  • 16 oz graham cracker crumbs for the crust
  • 1.5 cups granulated sugar divided
  • 32 oz cream cheese softened, for the filling
  • 1 cup sour cream
  • 4 large eggs
  • 1 tsp vanilla extract
  • 10 oz raspberry preserves for the swirl

Preparation Steps

  • Preheat your oven to 325°F (165°C).
  • Mix graham cracker crumbs with 1/2 cup sugar and press into the bottom of a 9-inch springform pan.
  • Beat cream cheese and remaining 1 cup of sugar in a large bowl until smooth.
  • Add sour cream, vanilla extract, and eggs one at a time, mixing slowly until just combined.
  • Pour half of the batter over the crust, drizzle raspberry preserves, then top with remaining batter.
  • Use a knife to swirl the raspberry preserves throughout the batter.
  • Bake for 85-90 minutes until edges are set and center is slightly jiggly.

Notes

To prevent cracking, let the cheesecake cool gradually in the oven. Store in fridge for optimal texture and taste.
