Instructions
Preparation Steps
Preheat oven to 400°F (200°C).
Wash and cut potatoes into 1-inch cubes.
In a large bowl, whisk together mayonnaise, buttermilk, parsley, garlic powder, salt, and pepper.
Add potatoes to the bowl and toss to coat evenly.
Spread potatoes in a single layer on a baking sheet.
Roast for 30-35 minutes, or until golden brown and crispy, flipping halfway through.
