  • 1.5 cups cooked chicken breast diced
  • 2 cups Romaine lettuce chopped
  • 1 cup black beans rinsed and drained
  • 1 cup corn kernels fresh or frozen
  • 1 avocado diced
  • 0.5 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 0.5 cup cilantro leaves chopped
  • 0.5 cup Mexican blend cheese shredded
  • 0.25 cup southwest ranch dressing

Preparation Steps

  • In a large bowl, combine the chopped lettuce, black beans, corn, diced avocado, cherry tomatoes, and red onion.
  • Add the diced chicken and toss gently to combine all ingredients evenly.
  • Sprinkle the shredded cheese and cilantro over the salad.
  • Drizzle the southwest ranch dressing over the top and toss the salad again to coat everything lightly.

Notes

This salad is best served fresh. You can pre-chop all the ingredients beforehand and store them in separate airtight containers in the fridge for up to 2 days.
