This Southwest Chicken Salad is a delicious blend of fresh vegetables and spicy chicken tossed with a zesty lime dressing. It's a perfect meal for busy weeknights!

  • 1 pound chicken breast boneless, skinless
  • 1 cup corn kernels fresh or frozen
  • 1 cup black beans rinsed and drained
  • 2 cups mixed greens
  • 1 cup cherry tomatoes halved
  • 1 piece avocado diced
  • 0.5 piece lime juiced
  • 1 tablespoon olive oil
  • 0.25 cup cilantro chopped
  • 1 teaspoon chili powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat a grill or grill pan over medium-high heat.
  • Season the chicken breast with chili powder, cumin, salt, and pepper.
  • Grill the chicken for about 5 minutes on each side or until cooked through.
  • Cut the grilled chicken into strips.
  • In a large bowl, combine mixed greens, corn, black beans, cherry tomatoes, avocado, and cilantro.
  • Squeeze lime juice and drizzle olive oil over the salad. Toss to combine.
  • Top the salad with the sliced grilled chicken.
