Quick Mediterranean Chickpea Stew

  • 2 tablespoons olive oil extra virgin preferred
  • 1 large onion finely chopped
  • 4 cloves garlic minced
  • 2 cans chickpeas drained and rinsed
  • 1 can diced tomatoes 14 oz can
  • 2 cups vegetable broth
  • 1 teaspoon cumin ground
  • 1 teaspoon paprika smoked
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon black pepper freshly ground
  • 4 cups baby spinach roughly chopped
  • 0.5 cup parsley fresh, chopped, for garnish

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add minced garlic and cook for another minute until fragrant.
  • Stir in chickpeas, diced tomatoes, and vegetable broth. Add cumin, smoked paprika, salt, and black pepper. Mix well.
  • Bring the mixture to a simmer and let it cook for about 10 minutes, allowing the flavors to combine.
  • Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
  • Taste and adjust seasonings if needed. Serve hot, garnished with fresh parsley.

Notes

This stew is naturally vegan and gluten-free. Feel free to add more vegetables like zucchini or bell peppers to enhance the nutritional value. Leftovers can be refrigerated for up to 4 days.
