  • 1.5 cups all-purpose flour sifted
  • 1 cup granulated sugar
  • 1 cup pumpkin puree not pumpkin pie mix
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 cup unsalted butter melted
  • 2 large eggs at room temperature

Preparation Steps

  • Preheat the oven to 350°F (175°C) and grease a muffin tin.
  • In a large bowl, combine the flour, sugar, baking powder, baking soda, and cinnamon.
  • In another bowl, mix together the pumpkin puree, melted butter, and eggs until smooth.
  • Combine the wet ingredients with the dry ingredients and stir until just combined.
  • Fill muffin tins about 3/4 full and sprinkle with crumb topping.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

Notes

These muffins can be stored in an airtight container for up to 3 days.
