Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a medium bowl, mix together flour, baking soda, and salt.
In a separate large bowl, beat pumpkin puree, oil, sugar, and cinnamon until smooth.
Gradually add the dry ingredients to the wet ingredients and stir until just combined.
Pour batter into the prepared loaf pan and spread evenly.
Bake in preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes before removing to a wire rack to cool completely.

This bread can be stored tightly wrapped at room temperature for up to 4 days.
