  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup pumpkin puree canned or fresh
  • 0.5 cup vegetable oil
  • 1.5 cups sugar
  • 0.5 teaspoon ground cinnamon

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  • In a medium bowl, mix together flour, baking soda, and salt.
  • In a separate large bowl, beat pumpkin puree, oil, sugar, and cinnamon until smooth.
  • Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  • Pour batter into the prepared loaf pan and spread evenly.
  • Bake in preheated oven for 50 minutes, or until a toothpick inserted into the center comes out clean. Let bread cool in pan for 10 minutes before removing to a wire rack to cool completely.

This bread can be stored tightly wrapped at room temperature for up to 4 days.
