A creamy and delicious potato salad perfect for barbecues and potlucks. This recipe features perfectly cooked potatoes, a tangy dressing, and crunchy celery.

  • 2 lbs Yukon Gold Potatoes
  • 0.5 cup Mayonnaise
  • 0.25 cup Yellow Mustard
  • 1 stalk Celery finely chopped
  • 0.5 cup Chopped Onion

Preparation Steps

  • Boil potatoes until tender. Drain and let cool.
  • Dice the potatoes.
  • In a large bowl, combine mayonnaise, mustard, celery, and onion.
  • Add the potatoes and mix gently.
  • Season with salt and pepper to taste.
  • Refrigerate for at least 30 minutes before serving.

Notes

This potato salad is best served chilled. You can add other vegetables, such as hard-boiled eggs or bell peppers, if desired.
