Pork Chops & Rice Casserole

This delicious Pork Chops and Rice Casserole is a comforting one-dish meal that's perfect for busy weeknights.

  • 4 pieces pork chops bone-in or boneless
  • 1 cup uncooked white rice
  • 2 cups chicken broth low sodium
  • 1 can cream of mushroom soup 10.5 oz can
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mix together rice, chicken broth, and cream of mushroom soup.
  • Pour the rice mixture into a baking dish. Season pork chops with salt and pepper, then arrange on top of the rice.
  • Cover the dish with foil and bake for 35 minutes. Remove foil and bake for an additional 10 minutes or until pork is cooked through.

Notes

For added flavor, consider adding some sautéed onions and garlic to the rice mixture.
