Pistachio Wedding Cookies

  • 2.5 cups all-purpose flour
  • 0.5 cup finely ground pistachios
  • 1 cup unsalted butter, softened
  • 0.5 cup powdered sugar, plus more for dusting
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt

Preparation Steps

  • In a large bowl, whisk together the flour, ground pistachios, and salt.
  • In a separate bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Beat in the vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. The dough will be crumbly.
  • Using your hands, form the dough into 1-inch balls.
  • Place the balls on a baking sheet lined with parchment paper.
  • Preheat oven to 325°F (160°C).
  • Bake for 10-12 minutes, or until the edges are lightly golden. The centers should still be soft.
  • Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  • Once cooled, dust generously with powdered sugar.

Store in an airtight container at room temperature for up to 3 days.
