Pineapple Upside-Down Muffins: A Delightful Twist

These pineapple upside-down muffins offer a sweet and tangy twist to traditional muffins, perfect for breakfast or dessert!

  • 1.5 cups all-purpose flour sifted
  • 0.5 cup granulated sugar
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup whole milk
  • 1 tbsp vanilla extract pure
  • 1 can pineapple slices drained and cut into small pieces
  • 0.5 cup brown sugar packed
  • 0.5 cup unsalted butter melted
  • 12 pc maraschino cherries

Preparation Steps

  • Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin.
  • In a bowl, combine the flour, sugar, baking powder, and salt.
  • Add milk and vanilla extract to the dry ingredients and mix until just combined.
  • In another bowl, combine the melted butter and brown sugar; place a tablespoon into each muffin cup.
  • Place a piece of pineapple and a maraschino cherry on top of the sugar mixture in each cup.
  • Pour the batter over the pineapple and cherries, filling each cup almost to the top.
  • Bake for 25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
  • Cool for 10 minutes in the pan, then invert the muffins onto a wire rack to cool completely.

Notes

Best enjoyed fresh out of the oven for a warm and delightful treat!
