Pineapple Bread

A delicious and moist pineapple bread recipe, perfect for breakfast or a sweet treat. This recipe uses fresh pineapple for maximum flavor.

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup crushed pineapple
  • 0.5 cup pineapple juice

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together flour, baking soda, and salt.
  • In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in the crushed pineapple and pineapple juice.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour batter into the prepared loaf pan and bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a sweeter bread, add 1/4 cup more sugar. You can also add nuts or raisins to the batter.
