Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon sesame oil
  • 1 pound ground chicken ground turkey can also be used
  • 1 medium sweet Vidalia or yellow onion diced small
  • 0.33 cup hoisin sauce
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon Asian chili garlic sauce or to taste (sriracha may be substituted)
  • 3 cloves garlic finely minced or pressed
  • 1 teaspoon ground ginger or 2 teaspoons freshly grated ginger (to taste)
  • 8 ounce can water chestnuts drained and diced small
  • 2 green onions 2 to 3, sliced into thin rounds
  • 0.5 teaspoon salt or to taste
  • 0.5 teaspoon freshly ground black pepper or to taste
  • 1 head butter lettuce for serving

Instructions

Preparation Steps

  • To a large skillet, add the olive oil and sesame oil. Add the ground chicken and cook over medium-high heat until the chicken is cooked through. Stir intermittently to crumble the chicken while cooking.
  • Add the diced onion, hoisin sauce, soy sauce, rice wine vinegar, and chili garlic sauce to the skillet. Stir to combine and cook for about 5 minutes, or until the onion is soft and translucent and most of the liquid has been absorbed. Stir intermittently.
  • Add the minced garlic and ground ginger to the mixture. Stir to combine and cook for about 1 minute, or until fragrant.
  • Stir in the diced water chestnuts and sliced green onions. Add salt and pepper to taste. Cook for about 2 minutes, or until the vegetables are tender. Taste the filling and make any necessary flavor adjustments, such as adding more soy sauce, hoisin, or pepper.
  • Spoon about 0.25 cup of the chicken mixture into individual butter lettuce leaves to serve.

Notes

This recipe is incredibly versatile! Feel free to adjust the chili garlic sauce to your spice preference. Ground turkey or beef can be used as a substitute for chicken. The chicken filling can be prepared in advance and reheats wonderfully, making it perfect for meal prep.
