Preparation Steps

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • In a large mixing bowl, cream together the butter and sugar until smooth.
  • Add the egg, peppermint extract, and red food coloring to the butter mixture and beat well.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Roll the dough into 1-inch balls and place them on the prepared baking sheets.
  • Bake in the preheated oven for 8 minutes, then quickly press a chocolate kiss into the center of each cookie.
  • Return to the oven and bake for an additional 2-3 minutes until the edges are set.
  • Allow cookies to cool on a wire rack before serving.
