These easy-to-make peanut butter banana cookies are a delightful treat for any time of day. Made with just a few simple ingredients, they're soft, chewy, and naturally sweet, perfect for a quick snack or dessert.

  • 2 medium ripe bananas mashed
  • 1 cup creamy peanut butter unsweetened preferred
  • 0.5 cup oat flour or all-purpose flour
  • 0.25 cup brown sugar packed, optional
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.25 cup chocolate chips optional

Preparation Steps

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, mash the ripe bananas until smooth.
  • Add the peanut butter, oat flour, brown sugar (if using), vanilla extract, baking soda, and salt to the bowl with the mashed bananas. Mix until well combined and a dough forms.
  • If adding chocolate chips, fold them into the dough.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie.
  • Lightly flatten each cookie with a fork in a crisscross pattern.
  • Bake for 10-14 minutes, or until the edges are lightly golden and the cookies are set.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a healthier option, skip the brown sugar or use a sugar substitute. These cookies are also great with a sprinkle of cinnamon.
