Instructions
Preparation Steps
Preheat the oven to 350°F (175°C).
In a medium bowl, whisk together the flour and baking soda.
In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until smooth.
Beat in the egg and vanilla extract until well blended.
Gradually add the dry ingredients to the peanut butter mixture, mixing just until incorporated.
Roll the dough into 1-inch balls and place on ungreased cookie sheets.
Make a small indentation in the center of each cookie and fill with about 1/4 teaspoon of jelly or jam.
Bake for 8-10 minutes, until the edges are set and lightly golden. Let cool before serving.
Notes
Store cookies in an airtight container for up to a week.
