  • 1.5 cups all-purpose flour
  • 0.5 teaspoon baking soda
  • 0.5 cup peanut butter smooth or chunky
  • 0.5 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.25 cup jelly or jam your choice of flavor

Preparation Steps

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, whisk together the flour and baking soda.
  • In a large bowl, cream together peanut butter, butter, granulated sugar, and brown sugar until smooth.
  • Beat in the egg and vanilla extract until well blended.
  • Gradually add the dry ingredients to the peanut butter mixture, mixing just until incorporated.
  • Roll the dough into 1-inch balls and place on ungreased cookie sheets.
  • Make a small indentation in the center of each cookie and fill with about 1/4 teaspoon of jelly or jam.
  • Bake for 8-10 minutes, until the edges are set and lightly golden. Let cool before serving.

Store cookies in an airtight container for up to a week.
