Pasta Primavera Recipe

  • 1 pound Pasta (rotini, penne, or your favorite shape)
  • 1 cup Broccoli florets
  • 1 cup Sliced carrots
  • 1 cup Sliced zucchini
  • 0.5 cup Sliced bell pepper (any color)
  • 0.25 cup Chopped fresh parsley
  • 2 tablespoons Olive oil
  • 3 cloves Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup grated Parmesan cheese

Preparation Steps

  • Cook pasta according to package directions.
  • While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant (about 30 seconds).
  • Add broccoli, carrots, zucchini, and bell pepper to the skillet. Cook until vegetables are tender-crisp (about 5-7 minutes).
  • Stir in cooked pasta, parsley, salt, and pepper. Toss to combine.
  • Serve immediately with grated Parmesan cheese.

Notes

Feel free to add other vegetables, such as asparagus, peas, or mushrooms.
