One Pot Gnocchi Chicken Pot Pie

Ingredients
  

  • 1 lb boneless skinless chicken breasts, diced
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 garlic cloves minced
  • 2 cups frozen mixed vegetables peas, carrots, corn, etc.
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 can 10.5 oz cream of chicken soup
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 lb package of gnocchi
  • 1 cup shredded cheddar cheese

Instructions
 

Step 1: Cook the Chicken

  • In a large skillet or Dutch oven, heat olive oil over medium heat.
  • Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

Step 2: Sauté Vegetables

  • In the same skillet, add a little more oil if necessary and sauté the onion for 2-3 minutes until softened.
  • Add the garlic and cook for 1 minute until fragrant.

Step 3: Make the Creamy Sauce

  • Add the frozen vegetables, thyme, rosemary, salt, and pepper to the skillet and stir to combine.
  • Pour in the cream of chicken soup, chicken broth, and heavy cream. Stir well and bring the mixture to a simmer.

Step 4: Add the Gnocchi

  • Stir in the gnocchi, making sure they are submerged in the sauce. Cover the skillet and simmer for about 5-7 minutes until the gnocchi are cooked through and tender. Stir occasionally to prevent sticking.

Step 5: Add Chicken and Cheese

  • Return the cooked chicken to the skillet and stir to combine.
  • Sprinkle the shredded cheddar cheese on top, then cover and cook for another 2-3 minutes until the cheese is melted and bubbly.

Step 6: Serve

  • Remove from heat, stir, and serve hot. Enjoy your comforting, one-pot dinner!
