Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add sliced mushrooms, cooking until soft, about 5 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Pour in the vegetable broth and bring to a boil. Add the penne pasta and reduce to a simmer.
Cook the pasta, stirring occasionally, until most of the liquid is absorbed and the pasta is al dente, about 10 minutes.
Stir in the heavy cream and Parmesan cheese until the sauce is creamy and the cheese has melted.
Season with salt and pepper. Garnish with chopped parsley before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream if the sauce has thickened.
