  • 1 lb penne pasta can substitute with rigatoni
  • 2 tablespoons olive oil extra virgin recommended
  • 1 lb mushrooms sliced
  • 4 cloves garlic minced
  • 2 cups vegetable broth low sodium
  • 1 cup heavy cream room temperature
  • 1 cup Parmesan cheese grated
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 2 tablespoons parsley chopped for garnish

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add sliced mushrooms, cooking until soft, about 5 minutes.
  • Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the vegetable broth and bring to a boil. Add the penne pasta and reduce to a simmer.
  • Cook the pasta, stirring occasionally, until most of the liquid is absorbed and the pasta is al dente, about 10 minutes.
  • Stir in the heavy cream and Parmesan cheese until the sauce is creamy and the cheese has melted.
  • Season with salt and pepper. Garnish with chopped parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of cream if the sauce has thickened.
