In a large bowl, dissolve yeast and sugar in warm water. Let sit for 5–10 minutes until frothy.
Add olive oil, salt, and 2 cups of flour to the yeast mixture. Stir until combined.
Gradually add remaining flour, mixing until a soft dough forms. Turn onto floured surface and knead for 5–7 minutes until smooth and elastic.
Place dough in a greased bowl, cover with a towel, and let rise in a warm place for 1 hour or until doubled in size.
Preheat oven to 375°F (190°C). Punch down dough and roll into a rectangle about 1/4 inch thick.
Cut dough into 12 equal strips. Place on a parchment-lined baking sheet.
Bake for 12–15 minutes until golden brown and cooked through.
While breadsticks bake, prepare garlic butter: mix melted butter, minced garlic, parsley, garlic powder, onion powder, and black pepper in a small bowl.
Brush warm breadsticks generously with garlic butter immediately after removing from oven.
