Ingredients
  

  • 1 cup 226g unsalted butter, softened
  • 1 cup 200g granulated sugar
  • 1 large egg
  • 1 ½ tsp vanilla extract
  • 2 ½ cups 310g all-purpose flour
  • ½ tsp baking powder
  • ½ tsp salt

Instructions
 

  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the egg and vanilla extract until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
  • Divide the dough into two disks, wrap in plastic wrap, and chill for 30 minutes.
  • Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  • Roll out the dough on a floured surface to ¼-inch thickness. Cut into shapes using cookie cutters.
  • Place cookies 1 inch apart on the baking sheet and bake for 8–10 minutes, or until edges are lightly golden.
  • Cool on the sheet for 5 minutes, then transfer to a wire rack to cool completely.
  • Decorate as desired or enjoy plain!
